Cinnamon Rolls with Cream Cheese Frosting

Today's RECIPE is a great project for a "mommies and kids project".
They taste great and would disappear in a jiffy. If you can get all the ingredients, do try this recipe.

Yields : 6 rolls (8x8 inch pan)


Ingredients

  • 1 .5 tsp instant yeast

  • 60 ml lukewarm water

  • 25 g caster sugar

  • 1/4 tsp salt

  • 60 ml fresh milk, room temperature

  • 30 g unsalted butter

  • 250 g all purpose flour

  • 1 egg, lightly beaten
    For the cinnamon sugar filling~

  • 30 g unsalted butter, softened

  • 50 g brown sugar

  • 1 tbsp ground cinnamon
    For the cream cheese frosting~

  • 30 g unsalted butter, softened

  • 60 g cream cheese

  • 80 g icing sugar

  • 1 tsp vanilla essence

  • 1 tbsp fresh milk


Method

01 Activate the yeast first. In a small bowl, add lukewarm water and sprinkle the yeast on top. Set the yeast mixture aside.

02 In a large bowl, add sugar and salt. Mix well. Set aside.
Add milk and butter to a small saucepan and heat on low heat to melt the butter. Once butter is melted, remove from heat.

Leave the milk butter mixture to cool for 2 -3 mins.

03 Check if your yeast has activated. There should be bubbles on the edges.
Add the egg and milk butter mixture to the sugar and salt.

Mix together. Add flour. Mix well with a spatula.

04 Add the yeast mixture and stir to mix well. Continue to mix and then use your hand to mix until the dough comes together, about 5 mins.
Make a ball and remove from your mixing bowl onto a lightly floured surface.

Flour your hands and knead for about 5 mins to get a soft, smooth dough.

05 Make a ball again and place in a large greased bowl. Cover with cling film and leave to rise for 1 hour or until double in size.
When ready, punch the air out of the dough using your fist. Take the dough out from the bowl and knead gently for 1 min.

06 Roll the dough into a large rectangle, 10”x8".
Spread softened butter all over the dough surface using a butter knife.
Combine the cinnamon and sugar. Sprinkle generously all over the butter.

07 Roll up the dough like a log from the short end. Cut the rolled log into 6 pieces, using a serrated knife.
Place the cut pieces onto a baking tray, 1" apart to allow room to rise.

Cover with cling film and allow to rise for 30 mins or more. (Grease the surface of the cling film that is touching the dough.)


08 Preheat oven to 180 C/350 F. Bake for 25 mins or until golden brown on top.

Remove from oven and allow to cool on a wire rack. Add the cream cheese frosting while the cinnamon rolls are still warm.

09 To make cream cheese frosting:
Add butter and cream cheese in a large mixing bowl.

Beat with an electric mixer on medium speed until creamy.
Add sugar, vanilla and milk. Beat until smooth.


When cinnamon rolls are baked, pour over the cream cheese frosting while they are still warm.
Serve warm or cooled.


Notes

You can also serve them without the cream cheese frosting. Just sprinkle more cinnamon sugar on top and serve.
