Moist Banana Raisin Cake

Ingredients

  • 10 small overripe bananas/240g, mashed

  • 1 tsp baking soda

  • 3 eggs/160g, lightly beaten

  • 100g castor sugar

  • 1/2 tsp vanilla extract

  • 60g corn oil/any vegetable oil

  • 140g cake flour or 120g plain flour + 20g cornstarch

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 150g raisins + 1 tbsp all purpose flour


Method

01 Preheat oven to 180C.
In a medium-sized bowl, mix the mashed bananas with the baking soda. Mix well. Set aside.

02 In a large bowl, add all the eggs with the sugar. Whisk until sugar is dissolved.
Add vanilla extract and the corn oil. Whisk to mix well.

Add salt and mix well.

03 Sieve the cake flour with baking powder. Add into the large bowl in 3 batches. Mix with a spatula until well-combined.

04 Add in the mashed bananas and mix well.
Toss the raisins with the all purpose flour. Add the raisins into the cake mixture.
Mix until just combined. Pour the cake mixture into a lined baking tin.

05 Bake in the preheated oven at 180C for 45mins or until a skewer inserted comes out clean.
Remove from oven and place on a wire rack to cool.
Slice when cooled and serve.


Notes

You can use any overripe bananas for this recipe as long as total weight is 240g.
For banana cake, it is best to use overripen bananas. Those ripened until you see black spots on the peel are best.
