Spiced Baked Chicken (Ayam Bakar Berempah)

Today's RECIPE is an easy one, Ayam Bakar Berempah/Spiced Baked Chicken. Just a quick marinade, then bake and voila! Lunch or dinner is ready.

Ingredients

  • 1 whole chicken, chopped into big pieces/4 chicken thighs

    To be blended/pounded~

  • 6 cloves garlic. peeled and chopped

  • 10 shallots, peeled and chopped

  • 10 stalks lemongrass, sliced (white part only)

  • 4 fresh red chillies, sliced

  • 4 cm piece of fresh ginger

  • 2 tbsp coriander seeds/ biji ketumbar

  • 1 tbsp star anise/bunga lawang

  • 1 tbsp cloves/bunga chengkih

  • 2 cm piece of fresh turmeric/2 tbsp turmeric powder

  • 1 tbsp curry chicken powder (optional)

  • 2 tbsp chilli powder (optional)

  • 1 cup water

    Dry ingredients ~

  • 2 chicken stock cubes

  • 2 tsp salt or to taste

  • 2 turmeric leaves, stem removed and sliced finely

  • 8 stalks curry leaves, stem removed

  • 8 tbsp cornstarch


Method

01 Place all the ingredients for blending into the blender. Blend until you get a fine paste.
In a large bowl, place the chicken pieces/chicken thighs. Pour the blended spice paste onto the chicken. Mix to coat the chicken well. Prick the chicken pieces all over with a fork so that they will be well marinated.

02 In a separate bowl, mix all the dry ingredients together. Pour the mixed dry ingredients into the other bowl with the chicken.
Mix well and set aside to marinate for 30 mins or longer.

03 Preheat your oven to 230 C.
Place the marinated chicken on a wire rack placed over your baking tray. Bake at 230 C for 20 mins.

04 Flip the pieces over and bake for another 20 mins or until the chicken is cooked.
To test for doneness, prick the thickest part of the chicken with a skewer or a knife. If the juices run clear(not bloody), remove from the oven and serve.


Notes

For more flavorful chicken, marinate for at least 4 hours.
