Ingredients

  • 200 g (7 oz) minced meat of your choice (we used pork)

  • 2 tubes egg tofu, sliced into 1 cm (1/4 inch) thickness

  • 8 baby corn, sliced diagonally

  • 1 pack fresh mushrooms of your choice, sliced (we used shimeji mushrooms)

  • 4 pips garlic, peeled and minced

  • 1/4 cup water

  • 2 tbsp oyster sauce

  • 2 tbsp light soy sauce

  • 1/2 tbsp sugar or to taste

  • 1/2 tsp salt or to taste

  • 1/2 tsp white pepper powder or to taste

  • 5 tbsp corn flour

  • enough cooking oil for pan frying

Method

01 In a medium bowl, marinate the minced meat with 1 tbsp light soy, 1/2 tsp white pepper and 1 tbsp corn flour. Set aside for 10 mins.

02 Heat enough cooking oil for pan frying in a wok/pan.

Place 4 tbsp corn flour in a plate. Dip the sliced egg tofu in the corn flour and drop them gently into the hot oil. Pan fry until golden brown. Turn off heat. Dish up and drain on kitchen towels.

Set aside.

Remove the cooking oil from the wok/pan until the remaining 2 tbsp of cooking oil is left.

03 Turn on heat. When the oil is hot, saute the minced garlic till fragrant and lightly browned.

Add the minced meat and stir fry until browned, about 5 mins. Add the baby corn and cook for 2 mins.

Add the mushrooms and the pan fried egg tofu slices. Stir fry for 2 - 3 mins, be mindful not to break up the tofu pieces.

04 Add the water and bring to the boil. Add the oyster sauce, light soy sauce, sugar, salt and pepper. Give it a good stir to mix well. Taste and adjust seasoning, if required.

05 Turn off heat, dish up and serve hot.


Notes

You can use either fresh or canned baby corn.

Use dried mushrooms if preferred but this dish tastes better with fresh mushrooms.
