This No Bake Cheesecake is a crowd favorite dessert at parties and gatherings. It is pretty easy to make - just whip it up and freeze. This RECIPE is the classic vanilla No Bake Cheesecake. You can switch it up with your favorite flavors by adding fruit puree, cocoa powder or coffee powder.

Yields : One 20cm/8 inch round cake


Ingredients

  • 113 g (1/2 cup) unsalted butter, melted

  • 150 g (1 and 1/2 cup) graham crackers, crushed finely

  • 50 g (1/4 cup) granulated sugar

  • 1/2 tsp salt

  • 480 g (2 cup) whipping cream, cold

  • 680 g (24 oz/3 cup) cream cheese, room temperature

  • 65 g (1 cup) icing sugar/powdered sugar

  • 2 tsp vanilla essence

  • your favorite fruits for the topping (optional)

Method

01 Lightly coat a 20 cm/ 8 inch round springform cake pan with non-stick spray and set aside.

02 In a large bowl, combine butter, graham crackers, granulated sugar and salt.

Stir until well-combined and becomes a sticky mixture.

03 Spoon the mixture into the springform pan and press to compress. Make sure it is level and compacted. Place in the freezer.

04 In your mixer bowl, place the cold whipping cream (directly from the fridge) and using the whisk attachment, beat until stiff peaks (about 8 - 9 mins).

Transfer the whipped cream from the mixing bowl to a clean bowl and place in the refrigerator.

05 Clean and dry the mixing bowl. Place the cream cheese, icing sugar and vanilla essence into the bowl.

Using the paddle attachment, beat on medium speed until smooth and creamy, about 3 mins.

Remove the bowl from the mixer.

06 Using a spatula, add in the whipped cream and fold. Do not over mix, fold until just combined.

Pour the mixture into the frozen crust. Smooth the top and decorate with fruits, if desired.

Cover with cling film and freeze for at least 6 hours.

After 6 hours, cut and serve.


Notes

If you prefer a softer texture, chill in the refrigerator for at least 12 hours instead of freezing.

For chocolate cheesecake, add 1 tbsp cocoa powder when beating the cheese mixture in step 05. For coffee cheesecake, add 1 tbsp instant coffee powder at step 05.

For strawberry cheesecake, add 2 tbsp strawberry puree at step 05. Or your favorite fruit puree.
