Sibu Kompia/Kompiang/Guang Ping

Sibu Kompia is a Fuzhou delicacy a.k.a. Fuzhou bagel. This Kompia/Kompiang/Guang Ping is popular in Sarawak and is slightly different from the Sitiawan Kompia. We will share the recipe for Sitiawan Kompia some time soon. Meanwhile enjoy baking these Sibu Kompia and eat it with the filling as shared here.

Ingredients

For the starter~

  • 100 g (7/8 cup) high protein/bread flour

  • 80 g (3/4 cup + 1 tsp) plain flour

  • 11 g (4 tsp) instant dry yeast

  • 230 ml (1 cup minus 1 tbsp) lukewarm water

    For the dough~

  • All of the starter

  • 400 g (3 and 1/4 cup) high protein/bread flour

  • 1 tbsp sugar

  • 2 tsp salt

  • 1 tbsp double action baking powder

  • 1/2 tsp alkaline water/kan sui

  • 120 ml (1/2 cup) water

  • 2 tbsp cooking oil

  • extra flour for dusting

  • 2 tbsp toasted sesame seeds (optional)

Method

01 In a large bowl, mix the high protein flour, plain flour, yeast and lukewarm water together. Mix well then cover and set aside at room temperature for 1 hour.

02 After 1 hour, the starter would be foamy and is ready to be used. Pour all the starter into your mixer bowl.

Add the high protein flour, sugar, salt, double action baking powder, alkaline water and water. Use the dough hook attachment and knead on medium speed for 10 mins.

Add the cooking oil and knead for another 10 - 15 mins.

Remove the hook, gather the dough into a ball and cover the bowl. Rest for 30 mins.

03 Preheat oven to 250 C/480 F. Place a metal baking tray in the oven to heat up.

04 Lightly flour your work surface. After resting for 30 mins, punch down the dough.

Transfer dough to the work surface. Divide into 14 equal balls.

Flatten each ball and use a chopstick or your finger to prick a hole in the center. Make the hole at least 1 cm/ 1/4 inch wide so that it does not close up during baking.

05 Remove the heated baking tray from the oven. Very quickly transfer the dough pieces onto the hot tray.

Leave a 2 cm/ 1 inch gap between the pieces. Use a spray bottle and spritz water all over the dough pieces before placing the tray back into the oven at the lowest rack for baking.

[If you prefer them with sesame seeds, sprinkle on some sesame seeds after spraying with water. Then put the tray into the oven for baking.]

Bake in the preheated oven at 250 C/480 F (top and bottom heat) for 5 - 8 mins. Turn the bottom heat off, remove the tray from oven and spritz water all over the pieces again..

Put it back into the oven and bake at 250 C/480 F (top heat only) on the middle rack for a further 15 - 20 mins until they turn slightly brown.

06 Remove from oven and allow to cool on a wire rack. Serve warm.


Notes

These Kompia will turn really tough when kept overnight. Slice into half and reheat in a toaster before consuming. You can eat it with jam or peanut butter besides the meat filling.

Or just enjoy them plain with a cup of tea or coffee.

If you prefer your Kompia sweeter, increase sugar to 2 tbsp.

You can also knead the dough by hand. If doing hand kneading, knead for 30 mins before resting for 30 mins. Punch down, divide the dough and place on the hot tray. Continue to step 05.
