This is the RECIPE for the Minced Pork Stew that is served as a filling with Sibu style Kompia. You can also use it as a filling for fried mantao or for pau. The recipe for the Kompia is over here.

Ingredients

  • 600 g (1.3 lb) pork or chicken mince

  • 2 tbsp dark soy sauce

  • 2 tbsp oyster sauce

  • 3 red onions, peeled and chopped

  • 8 pips garlic, peeled and minced

  • 1 stalk spring onion, chopped finely

  • 2 tbsp cooking oil

  • 1 and 1/2 cup water

  • cornstarch slurry (1 tbsp cornstarch + 1 tbsp water)

    For the seasoning~

  • 2 tbsp light soy sauce

  • 2 tbsp dark soy sauce

  • 3 tbsp sugar or to taste

  • 1/2 tsp salt or to taste

  • 1/2 tsp white pepper powder or to taste

Method

01 Marinate the minced meat with dark soy sauce and oyster sauce. Stir well and set aside for 1 hr.

02 In a large wok/pan, heat the cooking oil. Saute the garlic until slightly browned and fragrant, about 2 mins. Add the onions and stir fry until softened.

Add the marinated minced meat and saute until browned, about 6 - 8 mins.

Add light soy, dark soy and sugar. Stir continuously and cook for 1 min. Add the chopped spring onions and stir well.

Add the water and bring to the boil.

03 Reduce heat and simmer covered for 25 - 30 mins. Stir occasionally to prevent burning.

Season with salt and white pepper powder. Taste and adjust seasoning, if required.

04 Add the cornstarch slurry and bring to the boil while stirring. The sauce should thicken slightly. If you prefer a thicker sauce, simmer another 10 mins or until desired consistency.

05 Dish up and serve with Sibu Kompia.


Notes

To prepare the Sibu Kompia:

Heat oil(enough for deep frying) in a wok/pan and deep fry the Kompia until golden brown. Dish up and drain on kitchen towels.

Slice each Kompia into half and spoon on the Minced Pork Stew. Sprinkle with sesame seeds, if desired.

Serve hot.

You can also use diced pork belly or chicken breast instead of mince.

This recipe makes enough filling for about 20 pieces of Kompia.
