Ingredients

  • 1 kg (2.2 lbs) prawns, trimmed the sharp edges off but keep the shells intact

  • 12 tbsp tamarind paste* or to taste

  • 2 tsp dark soya sauce

  • 1/2 tsp white pepper powder

  • 4 tbsp sugar or to taste

  • 3 tbsp cooking oil

Method

01 In a bowl, place the prawns with the tamarind paste, dark soya sauce and white pepper. Marinate for at least 30 mins.

02 Heat oil in a wok/pan. When oil is hot, pour the contents of the marination bowl into the wok/pan.

Reduce to medium heat and saute the prawns for 2 - 3 mins.

03 Sprinkle the sugar in and turn up the heat to high. Stir fry till the sauce is thickened and prawns are cooked, about 5 - 6 mins.

04 Dish up and serve hot with plain rice.

Notes

You can find a picture of the tamarind paste/asam jawa used at the Pantry section. We used the seeded tamarind paste. If you prefer without seeds, add 2 tbsp water to the paste. Mix well then remove seeds. Use the seedless paste to marinate the prawns.

You can marinade the prawns overnight in the refrigerator, if preferred. Remove from fridge 30 mins before cooking time.
