Today's RECIPE can be cooked as a confinement dish for Chinese families but it is also enjoyed as it is as a daily homecooked dish. This is an easy recipe.

Ingredients

  • 2 chicken legs, chopped into bite-sized pieces

  • 4 cm (1 1/2 inch) piece of ginger, grated and juice extracted

  • 2 tsp cornstarch

  • 1 tsp white pepper powder

  • 1 tsp sesame oil

  • 2 tbsp light soy sauce

  • 160 ml (2/3 cup) water

    For the saute~

  • 1 tbsp vegetable oil + 1 tbsp sesame oil

  • 1 tbsp oyster sauce

  • 1 tbsp dark soy sauce

  • 1 tbsp sugar or to taste

  • 1 tbsp cornstarch + 2 tbsps water (cornstarch slurry)

    For the garnish~

  • 2 tsps white sesame seeds (optional)

  • 2 fresh red chillies, chopped

  • 2 sprigs spring onions, chopped

  • 4 cm (1 1/2 inch) piece of ginger, peeled and sliced into strips then fried until crispy

Method

01 Place the cleaned chicken pieces into a bowl. Marinate with ginger juice, cornstarch, pepper, sesame oil and light soy sauce. Set aside for 15 mins or longer.

02 When ready to cook, heat 1 tbsp of vegetable oil and 1 tbsp of sesame oil in a wok/pan. Reduce heat to medium then fry the ginger strips until golden brown. Remove and set aside. Using the same oil, add in the marinated chicken pieces. Stir fry for 5 mins.

Add water and bring to the boil. Simmer for 5mins. Add the oyster sauce, dark soy sauce and sugar. Stir well.

Add the cornstarch slurry. Bring to the boil while stirring till the sauce thickens. Turn off heat.

03 Add the chopped chillies and spring onions. Give it a quick stir and dish up to serve.

Garnish with the fried ginger strips and some white sesame seeds. (I omitted the sesame seeds)


Notes

Rice wine/ginger wine/red rice wine may be added to this dish to enhance its flavor and especially for confinement. Add 4 tbsps or more, just before adding the cornstarch slurry.
