They are easy to make and are super easy to throw into a ziploc and bring to any outing or get together. Ingredients

  • 226 g (8 oz) unsalted butter, chopped into cubes

  • 400 g (2 cup) sugar

  • 100 g (1 cup) unsweetened cocoa powder

  • 115 g (4 oz) 70% cocoa chocolate bar, chopped

  • 1 tsp vanilla extract

  • 3 large eggs, cold

  • 1/2 tsp salt

  • 120g (1 cup) plain flour

  • 1 tsp cornstarch

  • sea salt flakes for sprinkling*

Method

01 Line a 22 cm/9 inch square baking pan with non-stick parchment paper.

Preheat oven to 160 C/325 F.

02 Bring a small pot of water to the boil, keep it simmering. In a large heat-proof bowl, place butter. Set the bowl over the pot of simmering water.

When the butter begins melting, add sugar, cocoa powder and the chopped chocolate. Stir occasionally until everything has melted and the mixture looks glossy.

Remove the bowl from heat and allow to cool for 15 mins.

03 Add the vanilla and stir well.

Add the eggs, one at a time, stirring with a whisk until well-combined.

04 Add the flour, cornstarch and salt to the batter. Stir with a spatula until well-combined. Do not overmix. The batter should be very thick and smooth at this point.

05 Pour the batter into the lined baking pan. Sprinkle generously with sea salt.

Bake in the preheated oven at 160 C/325 F for 30 - 40 mins or until a a toothpick inserted in the center comes out coated with a little of the batter. The edge should be set but the center is still a bit soft.

06 Let the brownies cool at room temperature in the pan for 1 hour, then refrigerate just until they are firm, about 1 hour. Lift the brownies from the pan and peel off the parchment paper. Cut the brownies into 16 squares. Serve at room temperature.


Notes

The sea salt fudge brownies can be refrigerated for up to 3 days, and frozen for up to 1 month. Thaw overnight in the refrigerator before consuming.

If you are able to get Maldon sea salt flakes, add them for the sprinkling. If not, substitute with regular table salt.
