Pea Shoots with Whitebait

Here is a 3-ingredient dish that is quick to prepare yet still tastes delish. Pea Shoots with Whitebait is a favorite of ours. This RECIPE works great with bean sprouts/taugeh, as well.

Ingredients

  • 30 g (2 heaped tbsp) dried whitebait, fresh or frozen whitebait can be used

  • 200 g (7 oz/2 cup) pea shoots

  • 3 tbsp cooking oil


Method

01 Place the whitebait in a sieve. Rinse and drain, then pat dry with paper towels.

02 Place pea shoots in a colander. Rinse and drain. Tap colander to remove excess water.

03 Heat the cooking oil in a wok/pan. Stir fry whitebait in medium heat till golden brown and crispy; about 5 mins.

Remove from pain, leaving the oil. Set aside the fried whitebait.

04 In the same oil and using high heat, stir fry the pea shoots for 2 mins (or less) or until they turn color. Remove and place on your serving plate. Top with the fried crispy whitebait.

Season with salt and pepper to taste, if required.

05 Serve immediately.


Notes

Replace white bait with shallot crisps or garlic crisps and you will still get a tasty dish.

To make shallots/garlic crisps:

Peel and slice 50 g of shallots/garlic. Stir fry till golden brown and remove from wok/pan. Use the shallots/garlic oil for frying the pea shoots as in step 04.

Dish out the pea shoots. Top with the fried shallots/garlic crisps. Serve immediately.
