Kuih Apam Pandan Sarawak (Pandan Mini Cakes)

This is the the RECIPE for Kuih Apam Pandan Sarawak or Pandan/Screwpine Leaf Mini Cupcakes. It is a favorite breakfast item in Sarawak. Goes well with coffee or tea.

Ingredients

  • 100 ml thick coconut milk

  • 4 tbsp homemade pandan extract (Blend 12 pandan leaves with 100ml water....strain and allow to set for 4 hours or overnight in the fridge, take the bottom sediment for this recipe)

  • 60 g sugar or to taste

  • 2 medium-sized eggs

  • 100 g plain flour

  • 1 tbsp tapioca starch

  • 2 tsp double action baking powder

  • 1 tbsp corn oil

  • pinch of salt

  • 2 tbsp oil for the mould

  • 2 pandan/screwpine leaves for the pandan brush

Method

01 In a large bowl, mix together the coconut milk, pandan extract, sugar and eggs.

Mix well with a whisk until sugar dissolves.

02 Sift the flour, tapioca starch and baking powder together.

Add the sifted mix to the egg mixture. Stir to combine.

03 Strain the mixture through a sieve into a small jug.

Add the corn oil and salt. Stir to mix well.

Set aside while you prepare the mould.

04 Pour 2 tbsp cooking oil (for oiling your mould) into a small sauce plate. Heat your mould on the stove. When mould is heated, turn down to medium low.

Fold 2 pandan leaves into half and tie the ends with a rubber band. Use the pandan brush to oil the mould. Dip into the oil on the sauce plate and brush on the mould. Wait for 1 min.

Stir the mixture in the jug. Pour the prepared mixture from the jug into the oiled and heated mould. Fill until 80% full. Wait until the mixture starts to bubble.

05 When it starts bubbling, cover with a lid (any pot lid) and turn down heat to low.

Cook for 1 or 2 mins covered until the top is cooked. The sides will pull away from the mould slightly when it is cooked.

Remove the kuih from the mould with a skewer or a toothpick.

06 Repeat step 04 and step 05 until all the batter is used up.

Place on a wire rack to cool. Keep in an airtight container when cooled.


Notes

If you are unable to get double action baking powder, use self-raising flour instead of plain flour and regular baking powder.

Omit the pandan extract for plain cakes.

You can use coconut milk from cartons for this recipe.

Remember to stir the mixture well before filling up the moulds.
