Ingredients

  • 90 g (3/4 cup or 3.25 oz) butter

  • 70 g (1/3 cup) granulated sugar

  • 2 tbsp honey

  • 160 g (4 cup) cornflakes

Method

01 Preheat oven to 160 C/320 F,

Line a baking pan with paper cases. (We used 2.5 cm/1 inch diameter cases.)

02 In a saucepan, place the butter, sugar and honey. Mix everything together then melt the mixture over medium heat until bubbly and frothy.

Remove from heat and let cool for 5 mins.

03 Add in the cornflakes. Stir to mix well and coat the cornflakes evenly.

04 Work quickly and spoon half a tablespoon of the mixture into each paper cases.

05 Bake in the preheated oven at 160 C/320 F for 10 - 15 mins.

Remove and cool completely before storing in an airtight container.


Notes

These Honey Joys can keep up to 2 weeks at room temperature, up to a month in the refrigerator and up to 3 months if frozen. Thaw in the chiller overnight before consumption.

For variations, you can add chocolate rice, chocolate chips, crushed walnuts, crushed peanuts, crushed almonds, almond flakes, confetti, raisins, cherries or other dried fruits. Get creative and add your favorite.

Replace the cornflakes quantity with the additions you want. For example, if you are adding chocolate rice, use 50 g chocolate rice and 110 g cornflakes instead of 160 g.
