It's not difficult to salt Duck Eggs at home. Here is the RECIPE for Homemade Salted Egg and Salted Egg Yolk. Salted egg yolks are widely used in Chinese cooking so it’s really useful to make some to stand by.

Cure Time | 20 days for tropical climate, 30 days or longer for temperate climate

Yields : 20 salted eggs


Ingredients

  • 20 raw duck eggs

  • 1 and 1/2 cup coarse salt

  • 2 liter water

  • 1 large glass jar with lid, enough to contain all the eggs

Method

01 Wash and dry the eggs. Set aside.
Wash and dry the glass jar. Make sure it is grease-free.

02 In a pot, boil the water with the salt until all the salt dissolves.
Let cool completely.

03 Place the clean eggs gently into the glass jar. Pour the cooled brine solution into the jar until all the eggs are submerged. Place the lid on.

Put the date on the jar so you know when is your start date.

04 Put the jar in a cool, dry place for 20 days. (room temperature)

You can also wrap the whole jar in a piece of cloth before setting aside to cure.

05 To check whether your eggs are ready, boil one and taste on the 20th day.
If it's salty enough, remove all the cured eggs from the brine solution and keep the salted eggs in the refrigerator.

If it is not salty enough, leave them in the brine solution for 2 to 3 more days before checking again.

These salted eggs keep well for up to 6 months in the refrigerator.


Notes

You can also salt chicken eggs the same way. Chicken egg yolks normally are not so red, you'll get orange/light orange yolks. If you want a deeper egg yolk color, use omega chicken eggs.

Chicken eggs normally take a shorter time to salt compared to duck eggs. Check after day 16.

Some recipes add Chinese cooking wine (2 or 3 tbsp) and/or spices (star anise/cinnamon stick/bay leaves/tea leaves etc). You can experiment with your favorite spices to see which flavors you like.

If you want plain salted eggs, only salt and water is needed
