Ingredients

  • 125 g (1 cup) plain flour

  • 60 g (1/2 cup) unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 115 g (1 stick) unsalted butter, softened

  • 100 g (1/2 cup) granulated sugar

  • 100 g (1/2 cup) dark brown sugar

  • 1 large egg, room temp

  • 1 tsp vanilla extract

  • 200 g (1 cup) chocolate chips

For rolling~

  • 4 tbsp granulated sugar

  • 150 g icing sugar

Method

01 In a large bowl, sieve together flour, cocoa powder, sugar and salt. Mix well. Set aside.

In a mixing bowl, cream the butter, sugar and brown sugar until light and fluffy.

02 Add the egg and vanilla extract. Scrape down the sides and beat until well-combined.

Using a spatula, slowly mix the dry ingredients into the wet ingredients.

03 Mix well then add the chocolate chips. You will get a thick, sticky dough.

Cover with cling film and refrigerate the dough for 30 mins.

04 Remove cookie dough from the refrigerator and allow to sit at room temperature for 15mins.

05 Preheat oven to 180 C/350 F. Line 2 large baking trays with parchment paper.
Scoop and roll the cookie dough into balls.

06 Scoop about 1.5 tbsp for each cookie dough ball.

Place granulated sugar in one plate and icing sugar in another plate.
Roll each cookie dough ball lightly in the granulated sugar. Then roll them generously in the icing sugar.

07 Place each cookie dough ball on to the lined baking tray, about 5 cm/2 inch apart.

As you bake, the cookies will spread resulting in the crinkles.

08 Bake in the preheated oven at 180 C/350 F for 12 mins for fudgy cookies, bake for 15 mins or longer for crunchy cookies.

Cool for 5 mins on the baking tray. Then transfer to a wire rack to cool completely.


Notes

Do not coat too much in granulated sugar otherwise your cookies will turn out hard.

These cookies can keep for up to a week stored in an airtight container at room temperature.(2 weeks in the refrigerator).
