Yields : 8 buns (9 cm/3.5 inch diameter)


Ingredients

  • 500 g (3 cup + 2 tbsp) bread flour/high protein flour

  • 80 g (1/4 cup + 2 tbsp) dark brown sugar

  • 7 g (1 tsp) salt

  • 11 g (2 1/2 tsp) instant yeast

  • 300 ml (1 cup + 3 tbsp) lukewarm water

  • 30 g (2 1/4 tbsp) butter/shortening

  • 50 g (6 tbsp) white sesame seeds, toasted

  • 50 g (6 tbsp) black sesame seeds, toasted (mix both types of sesame seeds on a plate)


Method

01 You can either hand knead or machine knead the dough.

In a large bowl, place all the dry ingredients and give it a good stir to mix well. Slowly add in the lukewarm water. Mix on low speed for about 5 mins or until a sticky dough is formed.

Scrape down the sides and mix on medium high speed until a soft dough is formed, about 10 mins. The dough should not be sticking to the side of the bowl at this point.

02 Add the butter/shortening and knead on medium high speed for another 10 mins. The dough should be soft and springy now.

Grease a large bowl. Transfer the dough to the greased bowl.

Cover the bowl with a damp towel or cling film and set aside in a warm place to proof. Proof until the dough is double in size, about 30 mins.

03 When ready, lightly flour your work surface. Tip the dough onto the work surface.

Punch it down to remove all the air then roll into a long log. Divide into 8 equal portions.

Roll each portion into a ball, dip the top in some water then dip into the plate of mixed sesame seeds. Place onto a lined baking tray, giving an allowance of 2 cm/1 inch around each bun. Cover with a towel and set aside to proof for about 30 mins or until doubled in size.

04 Preheat oven to 180 C/350 F. Bake for 15 - 20 mins.

Remove and allow to cool completely before slicing.


Notes

If using a machine, use your dough hook attachment. You can also knead the dough in your bread maker and proof for first proofing then remove for shaping and second proofing.

Replace brown sugar with castor sugar for white Burger Buns.
