  • 200g butter, softened

  • 12g salt

  • 70g sugar

  • 12g instant yeast

  • 80ml full cream milk (lukewarm)

  • 4 eggs

Method

01 In a large bowl, mix flour, salt, sugar and eggs.

Place the yeast into the milk and pour into the mixture.

02 Mix till you get a shaggy dough. Knead for 10 mins while adding the butter 1 tbsp at a time.

Continue to knead for 10 more mins until you get a soft dough.

Shape the dough into a round ball. Place it into the bowl. Cover with a damp cloth and rest at room temperature for 90 mins.

03 After 90mins, divide the dough into equal parts of 8. Shape each part into a round ball.

Place the rounded dough into a baking tin. Rest for 2 hours covered at room temperature.

04 Preheat your oven to 180 C. Place the baking tin into your oven and bake for 30 mins.

Remove from oven and cool on a wire rack.

Notes

You may slice and lightly toast the brioche buns. Serve with jam and coffee/tea.
If you prefer a shiny top, you may brush the top with mixture of 1 lightly beaten egg yolk + 1 tbsp milk about 5 mins before baking is done. After brushing, put it back in the oven to bake till done.
