Bluepea Flower Steamed Cupcakes (Bunga Telang Huat Kuih)

Yields : about 20 cupcakes; 6 cm (2.4 inch) diameter


Ingredients

  • 500 g (3 cups + 2 tbsp) self-raising flour

  • 220 g (1 cup) castor sugar

  • 480 ml (2 cup) bluepea flowers extract [Steep 50 bluepea flowers in 480ml hot water. Strain before using]

  • 2 tsp baking powder

  • 1/2 tsp salt

Method

01 Prepare a steamer.

02 Sift flour into a bowl. Add sugar, bluepea flowers extract, baking powder and salt. Mix well.

03 Scoop cake mixture into heatproof cupcakes mould. You can line the moulds with paper liners if desired. Fill up to 90% of the mould.

04 Steam on high heat for 20mins. Make sure the water is at a rolling boil when you place the cupcakes in.

05 Serve hot. You can serve with fresh grated coconut (steam for 10 mins with a pinch of salt) if desired.


Notes

You can use plain flour instead of self raising flour. Replace baking powder with double action baking powder if you do so.
Keeps well for up to 2 days at room temperature.

Store unfinished cupcakes in a covered container in the refrigerator for up to a week. Reheat by steaming on high heat for 8 mins or microwave on medium high for 20s.
