Ingredients

  • 1.2 kg (2.6 lb) pork ribs, cut into 4 ribs per piece [can be substituted with beef ribs]

    For the Barbecue Marinade~

  • 5 shallots, peeled and blended/pounded

  • 5 cloves garlic, peeled and blended/pounded

  • 7 tbsp barbecue sauce or store bought Chinese BBQ Sauce

  • 5 tbsp brown sugar or to taste

  • 2 tbsp cooking wine [substitute with ginger juice for non-alcoholic version]

  • 2 tbsp light soy sauce

    For the Glaze~

  • 2 tbsp melted butter/margarine

  • 3 tbsp barbecue marinade (take it from the marinade bowl)

Method

01 In a large bowl, combine all the marinade ingredients. Mix until well-combined. Set aside 3 tbsp of the marinade for the Glaze.

Add in the ribs. Massage the marinade into the ribs. Marinade for 4 hours or overnight in the refrigerator.

02 When ready, preheat oven to 220 C/430 F. Line a baking tray with foil/parchment paper. Put the marinated ribs onto the baking tray and bake in the preheated oven at 220 C/480 F for 20 mins.

Baste with the Glaze.

Reduce the temperature to 160 C/320 F and bake for another 45 - 50 mins. Flip the ribs and baste the meat with the Glaze every 15 mins until cooked.

03 Remove from the oven and serve immediately.

Notes

If using beef ribs, cook for an extra 10 - 15 mins.

You may also put it on your barbeque grill and grill them covered for 20 mins. Then uncover and baste. Flip over and keep grilling and basting every 10 mins until the ribs are cooked, about 40 mins more.
